After the 3D scan, volumetric reconstruction automatically adapts the cutting process to each cheese, within the defined tolerances, to optimise the number of cubes or sticks that can be produced and maximise product yield.<\/p>\n<p>A saw removes material along its kerf, producing crumbs and residue that spread over the product and inside the machine.<\/p>\n<p>Our blades make 20,000 vertical vibrations per second. This movement opens and separates the material without removing any: cutting takes place without material loss from the kerf, sawdust or crumbs.<\/p>\n<p>The material remains in the portions and the cutting area stays clean. The cut surface is smooth and neat, giving the product an appetising appearance.<\/p>\n<p>Beyond cutting, our blades can space the portions to make enrobing and packaging easier. They can also place products directly onto cardboard bases or into the packaging cavities.<\/p>\n<p>Cutting, spacing and placement follow one another continuously on the same line, without an operator or manual handling between these operations. A waterjet cutting tool cannot provide controlled portion spacing or place products directly onto cardboard bases or into packaging cavities.<\/p>\n<p>Volume reconstruction and cutting plan optimisation make it possible to use more of the material in the required formats.<\/p>\n<p>Depending on the format, our machines can produce several tonnes of cheese cubes or sticks per day.
