SODEVA offers different ultrasonic blade profiles for food cutting. Selection depends on the product, cutting depth and how the portions move after cutting.
The 10° wedge profile is used for slicing meat products, pâtés, pâtés in pastry, rillettes and cakes. Its angled face guides the slice towards the receiving conveyor and helps it clear the blade.

Thin parallel-edge blades are suitable for cheese, cakes and fresh or frozen pastry slabs.
Half-wave and full-wave profiles provide cutting heights of approximately 65 mm and 140 mm respectively. The cutting edge can be symmetrical for pastry applications or asymmetrical for cheese.
Exponential blades are designed for applications where the blade does not need to push or move the portions onto a conveyor or tray. Their thicker profile supports high cutting speeds.

Special ultrasonic blade profiles are available for demanding products such as meat, nougat, duck breast and pork belly.
SODEVA also offers patented serrated and micro-serrated cutting edges for products with difficult skins, rinds or fibres. Contact us to arrange preliminary cutting trials and select a blade suited to your product.
