Cheese Blocks and Wheels on the Same Machine

The SODEVA Vibracut uses an 850 mm vibrating blade to cut large cheese blocks up to 800 × 800 × 400 mm into loaves or fixed-weight portions.

The same machine can also perform horizontal levelling of large cheese wheels with a clean and regular cut.

Depending on the cheese and recipe Vibracut can produce cubes sticks triangles and other custom shapes. Formats with edges from approximately 10 mm can be achieved according to product characteristics.

SODEVA machines cut thin slices from soft semi-hard and hard cheeses with high precision and consistent cutting quality.

Depending on the selected recipe the same machine can produce slices portions wedges cubes sticks or other customer-specific shapes.

Accurate product guidance and fully electric movements prevent deformation and ensure repeatable results for every cheese format.

3D Vision and Precise Cutting Between Labels

Our vision systems measure the shape dimensions and position of each cheese before cutting.

Combined with weighing and 3D scanning the control system calculates the optimum cutting positions to produce portions at the required target weight.

For labelled products the system can position each cutting line precisely between the labels. This improves product presentation packaging quality and material yield.

Machines for Small Formats and Large Cheese Wheels

SODEVA offers compact machines for portioning cheese wheels up to 400 mm in diameter. These models are particularly suitable for limited production areas and frequent format changes.

Dedicated solutions are also available for large cheese wheels up to 900 mm in diameter. Depending on the selected recipe the machine can produce a central core inner and outer rings wedges and fixed-weight portions.

Straight blades coring tools and portioning tools can be changed quickly. After weighing the control system calculates the optimum cutting positions for portions from approximately 200 to 400 g.

The final remaining portion can be sold at variable weight. This significantly reduces giveaway and material losses while improving the total yield of each cheese wheel.

Pre-Cutting Cheese Wheels and Blocks into Loaves

SODEVA designs machines to pre-cut cheese wheels and large blocks into cheese loaves. These formats can then feed high-speed slicers or grated-cheese production lines.

The patented holding system keeps the cheese securely positioned throughout the complete cutting operation. This ensures precise cuts at high production rates without deforming or damaging the product.

When required SODEVA can integrate several pre-cutting stations for cheese wheels and blocks up to 20 kg. The required dimensions and final formats are produced automatically at the end of the process.

Cheese wheels and loaves can also be portioned to the required target weight on the same machine without complex tooling changes.

SODEVA has developed cutting and portioning lines for many cheese varieties including Comté Abondance Gouda Emmental Tomme Fourme and Euroblocks.

Our machines process soft semi-hard and hard cheeses as well as round wheels rectangular blocks and cheese loaves.

Fixed-weight portioning reduces unsold giveaway and improves the use of remaining pieces. This increases material yield and can provide a rapid return on investment.

The software integrated into the machine control system supports production management according to TU1 and TU2 requirements. It records the necessary production data and provides traceable information for internal controls and inspection bodies.
