Reduce Cheese Give-Away with Fixed-Weight Cutting
SODEVA designs industrial cheese cutting machines for blocks, loaves and wheels. Our fixed-weight solutions adapt each cut to the cheese’s actual shape and weight, reducing give-away and producing more saleable portions.
For blocks and loaves, SODEVA’s patented strap holding system keeps the cheese stable during cutting. For wheels and half-wheels, automated cutting and portion transfer can feed the packaging process. Depending on the application, weighing and 3D vision help optimize the cutting plan.
Tell us your cheese formats, target portion weights and required output. We can review your project and arrange product trials at our SODEVAMERICA showroom in Connecticut.

Fixed-Weight Cheese Cutting and Yield Optimization
SODEVA designs industrial cutting systems that maximize the number of cheese portions meeting the target weight while reducing giveaway, trim losses and downgraded product.
Depending on the format and production objective, the solution can combine weighing, dimensional measurement, 3D vision and recipe-based calculations. Each cheese is analyzed individually so that the cutting pattern is based on its actual geometry and weight—not only on nominal dimensions.
This approach delivers repeatable portion accuracy and optimized saleable yield across blocks, loaves, full wheels and half-wheels, while taking production rate and downstream packaging requirements into account.
Multi-Format Cheese Cutting Solutions for Blocks, Loaves and Wheels
SODEVA develops multi-format cutting solutions for a wide range of cheese geometries, dimensions and textures—from rectangular blocks and long loaves to full wheels, half-wheels and smaller cylindrical cheeses.
Depending on the products and required portions, the system can combine vertical and horizontal cutting, dedicated tooling, recipe-controlled adjustments and multiple cutting stations. This flexibility enables manufacturers to process different cheese formats while maintaining clean, accurate cuts and controlled product handling.
The machine architecture is selected according to the product family: flexible portioning systems for blocks and loaves, or integrated positioning, cutting, portion extraction and in-line discharge for wheels and half-wheels.
Fixed-Weight Soft Cheese Sticks or cubes
SODEVA cuts soft cheese blocks into individual sticks or cubes at fixed weight, even when the product is too soft to be pushed through a cutting grid. Upstream vision guides the cutting plan, while controlled trimming of the side edges helps achieve the target weights and reduce give-away. The configuration shown discharges cut groups for manual separation; an alternative in-line configuration can transfer the portions directly toward packaging.
Horizontal Cheese Wheel Cutting for Wider Retail Wedges
The machine measures each cheese wheel’s height automatically and positions the horizontal cut at its midpoint. Tall wheels can also be cut into several round slices, which are then portioned into wedges. For the same target portion weight, halving the wheel’s height can approximately double the wedge angle and the surface visible to shoppers. The cutting unit can operate as a standalone machine or within a production line, with soft, semi-hard and hard cheeses.
From Product Trials to Factory Acceptance Tests
Every project begins with a detailed review of the products, target portions, production capacity, available space and downstream packaging requirements.
Customer products can be tested to validate the cutting quality, weight accuracy, product handling and proposed machine architecture before final engineering.
Product trials, machine demonstrations and process validation can be carried out on SODEVAMERICA’s dedicated test bench in Connecticut. Factory Acceptance Tests can also be organized locally according to the project configuration.
After validation, our teams coordinate installation, commissioning, operator training and technical support to ensure a controlled production start-up.
